Citrus + Cumin Chicken
The mountain of citrus zest that goes into this recipe packs a powerful but refreshing punch. It is balanced out by the warmness of the cumin and chili powder. This is a really great combination of flavors.
This recipe is at its best when cooked on the grill, but you can certainly cook it in a skillet or bake it if you don't have access to a grill.
The chicken goes great with rice, on a salad, or in a sandwich, but I like to serve it with some sliced avocado and grilled vegetables such as zucchini and onion. Though not on purpose, but this recipe happens to be paleo and Whole30 compliant if you're into those things.
Ingredients and Instructions
- 2 pounds chicken, however you like it - breasts, thighs, whatever
- zest and juice of one big orange
- zest and juice of 2 limes
- zest and juice of 2 lemons
- 11/2 tablespoons cumin
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/4 cup olive oil
Whisk everything together and add to a container or bag with chicken. Let marinate at least 3 hours, or overnight. I suppose you could do this in less time but it won’t be as good.
Pan-fry, broil, or preferably grill the chicken until it is done (165 degrees Fahrenheit).
